Sometimes, life´s greatest pleasures can be so simple. A walk on a soft carpet of fallen leaves, countless overlapping layers tinted green and brown, yellow and red, while I´m listening to those crinkling sounds every time our feet touch the ground – that´s all it takes to make me happy on an autumn day like today.
That, and streuselkuchen.
Streuselkuchen (for 2 small cakes 20 cm in diameter or 1 large cake):
For the yeast dough:
250 g AP flour
1 tsp /4g dry yeast
35 g sugar
1 pinch of salt
140 ml milk
1 tsp butter
for the streusel:
300 g flour
100 g sugar
200 g cold butter, in cubes
baking: 30 min 180°C/350°F
Gently warm milk and butter over low heat so that the butter is melted and the mixture is no more than lukewarm. In a large bowl, combine flour, yeast, sugar, and salt, then add the milk-butter-mixture. Knead for about 5 minutes, until the dough is well combined, unsticky and roughly ball-shaped. Cover and let rise for 1 hour (I place the bowl in the switched-off oven. The kitchen counter is fine, too, just make sure there´s no air draft).
Now you have time for the streusel: Using your fingertips, combine butter with the other ingredients in a medium bowl until there are no more butter flakes, just crumbles of different sizes. Cover with cling film and refrigerate until later.
After 1 hour or so, proceed with the yeast dough: It should have about doubled its volume, shape 2 small discs or a single larger one, place on parchment paper and let prove another hour, covered.
Then you can preheat the oven. Generously spread streusel on top of the yeast dough discs, keep any leftovers (if there are any) in the fridge or freeze them.
Bake for about half an hour, until the streusel have a slightly golden surface. Again, best the same day. Freezes well!

Streuselkuchen
Manchmal sind die einfachsten Dinge am allerschönsten. Ein Spaziergang auf einen weichen Teppich herabgefallener Blätter in zahllosen Schichten Grün und Braun, Gelb und Rot, das Knistern, sobald man den Fuß daraufsetzt – mehr braucht es nicht an so einem Herbsttag wie heute.
Das, und Streuselkuchen.
Streuselkuchen (ergibt 2 kleine – 20 cm Durchmesser – oder 1 großen Kuchen):
Hefeteig:
250 g Mehl Typ 405
1 TL /4 g Trockenhefe
35 g Zucker
1 Prise Salz
140 ml Milch
1 TL Butter
Streusel:
300 g Mehl
100g Zucker
200 g kalte, gewürfelte Butter
Backzeit: 30 min 180°C
Milch und Butter langsam erwärmen, bis die Butter geschmolzen und die Mischung nicht mehr als lauwarm ist. Mehl, Hefe, Zucker und Salz in eine große Schüssel geben, dann die lauwarme Flüssigkeit dazu. Etwa 5 Minuten verkneten, bis ein homogener, nicht mehr klebriger Teigklumpen entstanden ist. Abdecken und eine Stunde gehen lassen (im ausgeschalteten Ofen oder an irgendeinem anderen nicht zugigen Ort).
Jetzt ist Zeit für die Streusel: In einer mittelgroßen Schüssel mit den Fingerspitzen Butter in die übrigen Zutaten einarbeiten, bis am Ende keine Butter mehr zu erkennen ist, sondern nur noch Streusel unterschiedlicher Größe. Abdecken und kurz in den Kühlschrank stellen.
Nach etwa einer Stunde geht es mit dem Hefeteig weiter: Er sollte etwa doppeltes Volumen haben, dann kann man daraus 2 kleine oder 1 größere Scheibe formen, auf Backpapier setzen und wiederum etwa eine Stunde abgedeckt gehen lassen.
Dann den Ofen vorheizen und den Teig mit einer dicken Schicht Streusel bestreuen. Etwaige Streuselreste im Kühlschrank aufbewahren oder einfrieren.
Ungefähr eine halbe Stunde backen, bis die Streusel eine leicht goldgelbe Farbe annehmen. Wiederum schmeckt der Kuchen am besten am selben Tag. Was noch nicht gleich gegessen wird, läßt sich sehr gut einfrieren.
Oh, those leaves! Autumn is so beautiful, and yet … egads, I hate winter! A lovely cake, though. Streusel is never a bad idea.
